US Metric

3 lbs. spareribs

Salt, white pepper, as needed

¼-1/2 c. all purpose flour

3 TB vegetable oil

1 medium turnip, peeled, 1/8-inch thin slices

1 medium carrot, peeled, thinly sliced

2 TB cornstarch mixed with ¼ c. water

Sauce:

3 cloves garlic, minced

½ TB ginger, peeled, minced

2 pieces star anise

¾ c. brown sugar

1 c. water

½ c. cider vinegar

¼ c. sugar

Simmer for 2 hours or until soft.


Cooking Process:

Season ribs with salt and pepper. Lightly dust with flour. In a large skillet or wok over medium heat; brown ribs in oil. Add sauce ingredients. Bring to a boil; Reduce heat; simmer 1 ½ hours. Add turnip and carrot. Bring to a boil. Stir in cornstarch slurry until thickened. Reduce heat. Allow to simmer 20 minutes. Remove star anise. Serves 5-6.
