So Ono Li Hing Mangoes
We are lucky this year to have a bountiful mango season, unlike last year. While I am not a fan of ripe mangoes, I love anything made with green mangoes. This So Ono Li Hing Mangoes will make your mouth water waiting for the completed dish.
Place mangoes in a colander; generously sprinkle with Hawaiian salt. Toss well to salt slices of mango. Place a plate with a heavy weight (canned good or large measuring cup filled with water) onto mangoes. Allow to sit 2-4 hours. Rinse well; drain completely. Toss with li-hing mui powder as desired. Serves never enough.
