Marbled Tea Leaf Eggs

What can I say, I am a hard cooked egg fanatic. I love Chinese version which infuses the flavors of deep black tea and whatever Chinese herbs you choose to add. I like to use cinnamon and star anise. The result is a beautiful and savory delight which signifies prosperity!

6 hard cooked eggs*

Water as needed

2 TB black tea leaves

3 TB Aloha shoyu

1 cinnamon stick

2 whole star anise


Cooking Process:

*Prepare hard cooked eggs. Remove from water. With the lower back portion of a teaspoon; gently crack egg shells; keeping the eggs in the palm of your hand. Return eggs to water in saucepan over medium high heat. Add remaining ingredients. Bring to a boil.  Reduce heat; simmer 40-45 minutes. Turn off heat and allow to steep 4 hours.
