Jalna's Home Made Beef Jerky
An island favorite snack and popular omiyage gift item. Take advantage of your dehydrator and make batches of this Beef Jerky to share.
1 ½ lbs. flank steak, *thinly sliced against the grain
1 c. Aloha shoyu
1/4 c. brown sugar
1 TB liquid smoke
2 tsp. freshly cracked black pepper
*Freeze flank steak for ease in slicing. In a shallow dish or zip lock bag, marinate meat slices with soy sauce, brown sugar and liquid smoke overnight. Arrange on dehydrator racks. Sprinkle generously with pepper. Dehydrate as directed 6 hours. Serves never enough.
