4 large eggs

1 (8 oz.) pkg. bean sprouts

½ c. bamboo shoots, thinly sliced

5 stalks green onion, chopped

1 (6 oz.) can crabmeat, drained well

½ tsp. salt

¼ tsp. white pepper

Oil as needed, for frying

Sauce:

1 c. chicken broth

3 tsp. Aloha shoyu

1 tsp. sugar

1 tsp. white vinegar

3 tsp. cornstarch

Cooking Process:

In a saucepan over medium heat; combine sauce ingredients. Stirring until slightly thickened. Keep warm. In a mixing bowl; beat eggs well. Add bean sprouts, bamboo shoots, green onion, crabmeat, salt and pepper. In a large skillet over medium heat; ladle 1/3 cup of batter at a time. Fry patties until lightly browned on both sides. For service; spoon sauce over patties. Serves 3-4.
