Mango Yogurt Popsicles
Ice pops, paletas, popsicles...called them what you like, but we all grew up eating these. This is the perfect summer treat to keep things cool. Made with fresh fruit, these grown-up version of popsicles with no added sugar will appeal to young and old alike.
- Makes 4-6 depending on the size of your moulds.
- 2 ripe mangoes, peeled, seed removed and flesh roughly chopped
- 1 ripe banana, peeled
- 1 cup thick Greek yoghurt
Blend the mango and banana in a food processor until smooth. Add yogurt and pulse a few times to just incorporate. Spoon into popsicle molds, push in the sticks and freeze overnight. Run the bottom of the moulds under warm water to release.
