Mango-Peach Macadamia Ice Cream Bars
Nice, easy, can-be healthy ice cream treat. The nice thing about this dessert is that you can control how healthy or decadent this dessert can be. If you want it on the healthier side, use lower or non fat, low sugar or sugar free ice cream. This is a treat that everyone can indulge in with a few simple adjustments. You can even use less of a fruit layer.
Grease an 8x10 baking pan and line with clear wrap or waxed paper.
Blend peaches, some of the peach juice and fresh mangoes until almost smooth. Pour 3/4 of mixture into prepared pan. Smooth surface. Cover surface with plastic wrap. Freeze for 2 hours or until just firm.
Remove pan from freezer. Gently press macadamias into peach mixture. Mix remaining peach-mango mixture with ice-cream. Pour over fruit mixture and smooth surface. Cover surface with plastic wrap. Freeze for 3 hours or until firm.
Remove ice-cream mixture from pan. Place on a board. Carefully cut crossways into wide strips or desired. Cut each strip in half to make 20 bars. Place in freezer until ready to serve.
Notes: You can make this as healthy or as decadent as you wish by the type of icecream that you use. If you are diabetic, use a no sugar added or sugar free ice cream that is lower in fat.
