Broccoli Rabe, Sausage & Orecchiette
Broccoli Rabe, Sausage and Orecchiette is one of my go to dishes during the week. Simply because it is fast, delicious and I love broccoli rabe. One of my favorite Waimanalo farmers always has them available at my neighborhood market.
½ lb. orecchiette pasta, cooked according to package directions
¼ c. pasta liquid
1 medium bunch broccoli rabe, 1 inch lengths, parboiled, drained
Iced water bath, as needed
1/2 lb. spicy Italian sausage, casings removed
2 TB olive oil
1-2 TB tomato paste
1/4 c. white wine
salt and freshly ground black pepper, to taste
garnish: Parmesan cheese, grated
Prepare pasta; reserving some pasta liquid. Prepare broccoli rabe; shock in iced water bath until ready for use. In a skillet over medium heat; brown sausage in oil. Add tomato paste; stir well to combine. Brown tomato paste. Deglaze skillet with wine; stir well to combine. Add parboiled broccoli rabe. Season with salt and pepper. Spoon pasta and a little bit of its cooking water into skillet with sausage mixture. Stir well until heated through. Divide pasta among serving plates; sprinkle with cheese. Serves 3-4.
