 Chicken Fried Rice Recipe

  • 2 chicken breasts or thighs poached in soy and ginger, sliced
  • 4 cups cooked rice
  • 1 onion, diced
  • 3 cloves garlic, crushed
  • 1 knob ginger, sliced
  • 1 red capsicum, diced
  • 1 bunch green onion, diced1
  • 1/2 bunch cilantro, chopped
  • 2 fresh chili, sliced
  • 1/2 cup shrimp
  • 3 eggs
  • Aloha shoyu
  • 3 slices bacon, diced
  • 1/2 cup peas, frozen are ok
  • 1/2 cup broccoli, cut into small trees
  • 4 button mushrooms, sliced
  • 4 shittake mushrooms, sliced
  • 2 shallots, sliced
  • 1 cup bean sprouts,
  • 1 carrot, cut into rounds
  • 1 cup Chinese cabbage, shredded
  • Deep fried shallots to taste and garnish

Cooking Process:

 

In a bowl whisk soy and eggs together. Pour into hot fry pan, fry the eggs and soy for 1 min.

Fry garlic, shallots, ginger, chillies, bacon, capsicum, carrot, mushrooms, peas, shrimp, broccoli, cabbage, jasmine rice, chicken and finish with beans. Add some soy sauce, tamari and toss all ingredients together. Top with bean sprouts, deep fried shallots, coriander and egg.
