Bubble Tea Pineapple Smoothie
All the rave here, especially in Chinatown are bubble tea drinks and smoothies. Served with big fat straws for you to drink up those tapioca pearls. Every fresh fruit stand, now offers these wonderfully refreshing beverages.
In a saucepan over medium heat; dissolve sugar in water. Bring to a boil; remove from heat. Allow to cool. Set aside. In a large saucepan over medium heat; bring water to a boil. Add tapioca pearls and stir until they float to the top and plum up. Cover and simmer 4-5 minutes. Drain well. In a blender; combine pineapple, yogurt, milk, ice and syrup. Puree until smooth. Spoon tapioca pearls as desired into glasses; pour smoothie onto pearls. Serves 2.
