Kalua Pig Grilled Cheese Sandwich w/Lomi Mayo

I love this sandwich!!  Two pieces of Kings Hawaiian Sweet Bread, slathered with lomi tomato mayo (a take on lomi salmon) and layered with smokey, succulent kalua pork and sharp white cheddar!!  Where's the tomato soup??

US Metric
  • 8 slices King's sweet bread sliced
  • 12 ounces sharp White cheddar, sliced
  • 3 tablespoons unsalted butter, softened
  • 12 ounces Kalua Pork, room temperature

Lomi Mayo

  • 1 Tomato
  • 1/4 onion
  • 1/4 cup mayonnaise
  • 1 Tablespoon finely minced green onion

Cooking Process:

Heat a heavy gauge large skillet over medium- heat. Top each slice with mayonnaise or try lomi mayo, Cheddar, 1/4 of the kalua pork and additional Cheddar. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip the sandwich and continue to cook until cheese is thoroughly melted and sandwich is golden brown. You can do this on a Panini press and substitute butter with olive oil.

Lomi Mayo

Cut out seedy innards of tomato saving only the fleshy outer part with skin.  Rough cut onion and throw tomato and onion in food processor or blender with a 1/2 teaspoon salt and mayo.  Pulse until you get a creamy mayo. Pour mixture into bowl, garnish with minced green onion.  Use this to spread on inside of grilled cheese sandwich before grilling.
