  • 3/4 cup boneless chicken
  • 1 Tbs Hawaiian salt
  • 1/2 tsp baking soda
  • 4 Tbs butter
  • 1 medium onion, chopped
  • 2 cups chicken stock
  • 1 cup coconut milk
  • 1 lb luau leaves (or buy precooked)
  • 1/2 tsp salt
  • 1 Tbs sugar

Cooking Process:

If you aren't using pre-cooked (frozen) taro (luau) leaves: Rinse luau leaves and trim off stems and thick veins. In a stock pot bring 3 cups of water, Hawaiian salt and baking soda to a boil. Add luau leaves, reduce heat and cook, partially covered for one hour. Drain and squeeze out excess liquid. Remove skin from chicken and cut into pieces. In a large saucepan, heat butter and saute onions until translucent. Stir in chicken and chicken stock. Cook 3 minutes, stirring frequently. Add coconut milk, cooked luau leaves, sugar and salt. Simmer for 30 minutes, or until chicken is cooked.
