Stuffed July 4th Strawberries
Another simply yet festive strawberry dessert that will wow your guests!!
- 24 pieces Strawberries
- 8 ounces, weight Mascarpone Cheese
- 3 Tablespoons Powdered Sugar
- 1 teaspoon Vanilla
- 24 pieces Blueberries
Cut the tops and bottoms off the strawberries. With the small end of a melon baller scoop out the inside of the strawberries.
Beat the mascarpone cheese, powdered sugar and vanilla till smooth and slightly fluffy.
When the cheese mixture is done, put into a pastry bag (or Ziploc bag with a corner cut) and pipe into the strawberries.
Top each strawberry with a blueberry and enjoy. You can make these ahead of time and keep them in the refrigerator till ready.
Variations: add chopped macadamia nuts in the mixture or sprinkle. Dip strawberries in white chocolate or drizzle with a balsamic vinegar reduction.
