Li hing sweet potato fries may not sound like a likely pairing but the sweet-savory quality of the yellow sweet potato (yam) and the sweet spice of li hing powder are a match made in heaven.  Dip these into a li hing-mayo dipping sauce and you are set!

  • 3 good sized yellow sweet potatoes (they are actually yams)
  • 2 tablespoons milk
  • 2 tablespoons li hing powder
  • flour
  • oil for frying

Li hing dipping sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1/2 teaspoon li hing powder
  • 1/4 teaspoon cinnamon

Cooking Process:

Heat oil to 350-360 degrees in a medium deep pot to prevent oil splatter.

Cut potatoes into french fry thickness and length, put in plastic bag with milk and li hing powder and shake well to ensure that li hing powder coats the potatoes well.  Now add 1/4 cup flour to the bag and shake.

Cook coated potatoes being careful to remove any excess flour before dropping potatoes into the hot oil.  Do not overcrowd the fries while cooking.  Drain fries and sprinkle with additional li hing powder optional.
