Kale Waldorf Salad
Kale is an item that is in super abundance at our local farmers market lately. I buy it regularly and love coming up with interesting ways to prepare it. This Kale Waldorf Saladis a great nutritional and ono salad recipe using kale.
6 c. kale, shredded, loosely packed
1 large apple, cored, chopped
½ c. green grapes
½ c. red grapes
½ c. walnuts, almonds or pumpkin seeds, chopped
½ c. raisins, golden raisins, dried cherries or dried cranberries
3 TB mayonnaise
1 ½ TB Dijon mustard
1 ½ TB red wine vinegar
1 TB water, as needed
pinch salt and freshly ground black pepper, as needed
In a large mixing bowl; whisk together dressing ingredients; adding water as necessary to bring to desired thickness. Toss kale into dressing. Allow to sit 5 minutes. Add apple, nuts and raisins. Toss well to combine. Refrigerate 10-15 minutes before serving. Serves 3-4 entree.
