Stir Fry Pork & Eggplant

I absolutely love a good date bar. I often prepare this Stir Fry Pork and Eggplant to give away, but it never seems to leave the house. A delicious dish combining tender eggplant and tangy pork with a spicy garlic sauce. Unbeatable!

US Metric

 

1 TB vegetable oil

½ lb. pork, thinly sliced

1 clove garlic, grated

½ lb. Japanese eggplant, thinly sliced

Sauce:

¼ c. water

¼ c. chicken broth

2 TB Aloha shoyu

2 TB sake

1 tsp. chili garlic paste

1 tsp. cornstarch

½ tsp. salt

Freshly ground white pepper

 

 

 


Cooking Process:

In a mixing bowl combine sauce ingredients. Set aside. In a skillet or wok over medium high heat; sauté pork and garlic in oil 1 minute. Add eggplant and sauce. Cook 4-5 minutes; stirring until eggplant has wilted and sauce has thickened. Serve with steamed rice. Serves 3-4.
