Macadamia nut shortbread cookies!  A great big batch recipe to bake and share. Great for a cookie exchange party !

US Metric

 2 ¾ c. butter, softened

1 lb. confectioner’s sugar

3 tsp. vanilla extract

7 c. all purpose flour

¼ c. cornstarch

2 tsp. baking soda

1 ½tsp. salt

2 c. macadamia nuts, chopped

Cooking Process:

In a mixing bowl; cream together butter and sugar Add vanilla. On parchment paper; sift together dry ingredients. Stir into butter mixture. Add macadamia nuts. Shape into 1 ½-inch logs. Roll in waxed paper or plastic wrap. Refrigerate 3-4 hours. Preheat oven to 350 degrees. Line baking sheets with parchment paper. Slice rolls into ¼-inch discs. Place onto prepared pans1 ½-inches apart. Bake 14-16 minutes until slightly browned around the edges. Makes approximately 7 dozen.
