US Metric

1 (2 oz.) bundle long rice, soaked, 1-inch lengths

3-4 small dried shiitake mushrooms, soaked, stems removed, thinly sliced

½ lb. ground pork

2 tsp. vegetable oil

4 stalks green onion, chopped, white parts & green parts separated

5 c. chicken broth

1 large egg, beaten


Cooking Process:

In a saucepan over medium heat; brown pork in oil. Add white parts of green onion, garlic and ginger. Cook 1 minute. Add broth, long rice and mushrooms. Bring to a boil. Reduce heat; stir in beaten egg. For service; garnish with green parts of green onion. Serves 2-3.
