This Papaya Fritters was a tasty bite that left me wondering…what is this I am eating ? A recipe shared with me by a co-worker from the Philippines, she said this was her grandmother’s recipe.
2 c. half ripe papaya, peeled, thinly sliced or shredded
1 ½ c. all purpose flour
2 tsp. baking powder
2/3 c. milk
1 large egg
½ tsp. salt
Oil, for frying
In a large skillet or deep fat fryer; heat oil. In a shallow dish; place sugar. In a mixing bowl; combine all ingredients well. Drop by heaping tablespoonful into heated oil. Fry until golden brown. Roll in sugar for service. Serves 12-14.
