Mustard Cabbage Soup
A simple and flavorful “feel good” soup. Feel free to prepare this without the pork and have a vegetarian soup. You can also substitute kai choy, bok choy, choi sum or any of your favorite greens.
1 tsp. vegetable oil
1/2 lb. boneless pork, thinly sliced
1 1/2 inch piece ginger
3 fresh shiitake mushrooms, sliced
8 c. chicken stock
1 lb. mustard cabbage, 2 inch pieces
3/4 tsp. salt
pinch white pepper
In a saucepan over medium heat, brown pork in oil. Add ginger and mushrooms; stirring to heat through. Add stock; simmer 15 minutes. Add cabbage; salt and pepper. Serves 4-6.
