Kalua Pork On Taro Roll w/Poi Mayo Spread & Pineapple Slaw

This is the perfect island-style sandwich to serve at a party!!  You can either use store-bought ingredients ie. kalua pork, pulled pork or make your own...whatever you prefer!  This is such a delicious sandwich served on a fresh taro roll and poi mayo.

1 package Taro Rolls (click for recipe)

Poi Horseradish Mayonnaise Spread

  • 1/2 Cup Poi, fresh
  • 1/4 Water
  • 1 tsp. Horseradish, prepared (to taste)
  • 2 Tblsp. Mayonnaise

Slaw Dressing:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tsp sugar
  • 1 Tbsp onion, finely chopped
  • 1 tsp lemon juice

Slaw:

  • 1 cup red cabbage, shredded
  • 2 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 3/4 cup pineapple pieces, drained or fresh pineapple
  • 1/4 cup nuts (i used macadamia)

** feel free to add what ever you like such as raisins, nuts, apples, mandarin oranges etc


Crockpot Kalua Pork (or buy store-bought)

  • 1 (6 pound) pork butt (or shoulder) roast
  • 1 1/2 Tablespoons Hawaiian Sea Salt….(we used Kosher salt)
  • 1 Tablespoon liquid smoke flavoring

 


Cooking Process:

 

Poi Mayonnaise Spread

In small mixing bowl, combine poi and water and mix well using a wire whisk. Add horseradish, then mayonnaise. Chill before serving.

 

Pineapple Slaw

In small bowl, combine all dressing ingredients. Blend well. In large bowl, combine all salad ingredients. Toss lightly. Pour dressing over salad. Mix well. Cover. Refrigerate to blend flavors.

Kalua Pork

 

Pierce pork all over with a carving fork. Rub salt then liquid smoke over meat. Place roast in slow cooker.

Cover and cook on Low for 16 to 20 hours, turning once during cooking time.

Remove meat from slow cooker and shred, adding drippings as needed to moisturize.

 

how to serve:

Assembly:

Take a taro roll or Hawaiian sweet roll and grill with butter.  Spread with the poi mayonnaise, add kalua pork and top with pineapple coleslaw!
