Fresh Watermelon Salad w/Balsamic-Coconut Dressing
Fresh Watermelon Salad w/Balsamic-Coconut Dressing - Light, refreshing and delicious!!
- 8+ cups Watermelon cut in cubes
- 1/2 cup shredded coconut
- 1 cup Coconut Milk
- 8 Tbsp Balsamic Vinegar
- 1/2 cup pineapple juice reduced to 1/4 cup concentrate
- finely minced mint sprigs (optional)
Cut Watermelon into bite-sized cubes and refrigerate. Bake half of the coconut shreds in 350 degree oven until crisp and golden brown,set aside. Reduce 1/2 cup of pineapple juice by half or until it measures 1/4 cup. Set aside until cool.
When ready to serve, Mix all ingredients in a bowl and garnish with shredded coconut and fresh mint if you desire.
