  • 8+ cups Watermelon cut in cubes
  • 1/2 cup shredded coconut
  • 1 cup Coconut Milk
  • 8 Tbsp Balsamic Vinegar
  • 1/2 cup pineapple juice reduced to 1/4 cup concentrate
  • finely minced mint sprigs (optional)

Cooking Process:

Cut Watermelon into bite-sized cubes and refrigerate.  Bake half of the coconut shreds in 350 degree oven until crisp and golden brown,set aside.  Reduce 1/2 cup of pineapple juice by half or until it measures 1/4 cup.  Set aside until cool.

When ready to serve, Mix all ingredients in a bowl and garnish with shredded coconut and fresh mint if you desire.
