

Poke Napoleons
A simple dish that can be served as shown, as a salad or even smaller portioned appetizers. This is so easy to make.... fresh poke, crisp wonton layers and crisp, fresh pickled vegetables make this a standout dish!





- fried Wonton wrappers
- oil for frying
garnish: radish sprouts. sesame seeds optional
Poke
- 1 pound fresh ahi, cubed
- pinch hawaiian salt
- 2 tsp. sesame oil
- 1 tablespoon Aloha shoyu
Pickled vegetables
- 1 lb bean sprouts
- 2 carrots, shredded
- 1 bunch of green onions, cut into 2-3 inch segments
- 1 red onion, sliced thin
- 1.5 cups water
- 1/2 cup distilled white vinegar
- 2 Tablespoons salt
- 1/4 cup sugar
Start by heating oil to 325 degrees. Fry wonton wrappers until crisp and golden brown. drain on paper towels. I use 2 wontons in each serving but you can stack them as high as you want. just be sure to fry more wontons. This can serve 4 good sized servings or 6 small servings.

feel free to add additional items such as onions, green onion, inamona etc Combine all ingredients. Mix well and chill.
Pickled Bean Sprouts
In plastic container with a lid, combine the ingredients. Close container and set in the refrigerator. The pickled vegetables should be ready in 6-8 hours but best overnight.
