Piri Piri Chicken

Piri Piri Chicken is a spicy Portuguese style of roasting chicken.  I like to roast mine at a high temperature over fresh vegetables. The drippings from the chicken give the vegetables an amazing flavor!!

Piri Piri Chicken

  • 1 whole chicken, about 3½ lb
  • 6 fresh hot red or green chiles
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tsp hot paprika
  • ½ tsp dried oregano
  • 3 garlic cloves
  • 1 tsp salt
  • 2 carrots
  • 2 potatoes
  • 3 zuchinni

Cooking Process:

To make my piri piri chicken, preheat the oven to 375°F. Spread the chiles on a baking sheet. Roast about 15 minutes, until shriveled. Let cool, then remove the stalks from the chiles. Combine the whole chiles, oil, vinegar, paprika, oregano, garlic, and salt in a saucepan. Simmer over low heat for about 3 minutes. Let cool. Purèe in a blender.

Butterfly whole chicken. Transfer the chicken to a non-reactive dish. Coat the chicken with the marinade. Cover and refrigerate for least 2 hours.

Preheat the oven to 400°F. Place sliced carrots, zuchinni and potatoes on bottom of baking pan. Remove the chicken from the marinade and place chicken on top of vegetables, skin side up. Roast chicken about 1 hour or until juices run clear. Serve hot

how to serve:

I love to serve piri piri chicken with crisp roasted potatoes.  Sometimes I like to roast the potatoes in the chicken drippings so that the flavor of the chicken gets braised into the roasted potatoes.
