Kalua Pig Sweet Potato Hash
Kalua pork sweet potato has is perfect for breakfast/brunch get-togethers. Its made with smokey, tender kalua pork (hawaii's version of pulled pork), crisp sweet potatoes and maui onions.
- 1 lb kalua pork (pulled pork)
- 3 sweet potatoes (yellow yams), cubed
- 1 sweet maui onion, chopped
- spinach (optional)
- bell pepper (optional)
- salt/pepper to taste
To make this kalua pork (pulled pork) benedict recipe, heat 1 tablespoon oil in medium sized pot, add onions and cook for 5 minutes. Add more oil to cover bottom of pot and turn heat to high. Fry sweet potato cubes for about 10-15 minutes until nice and crispy. Add more oil if necessary. Add spinach and kalua pork (pulled pork) and allow to cook for 5-7 minutes. Add salt and pepper if necessary. Serve with a nice egg on the top.
