Stuffed California Roll Tacos

This recipe takes the basic concept of the California roll stuffed into a taco. They make the perfect appetizer for game time, tailgates and parties. You can serve them as a build-your-own or on tortilla chips as a smaller appetizer.

  • 12 corn tortillas
  • oil for frying
  • 4-6 pounds of imitation crab meat
  • mayonnaise
  • 4 cucumbers, julienned

other fillings/toppings: avocado, daikon, kimchee, cabbage


Cooking Process:

Fry tortillas in hot oil. If you don't feel like cooking them in the shape of a taco, fry them flat and serve as a tostada or cut into chip size and serve as a smaller sized pupu. Once tortillas are finished cooking, julienne the cucumber and assemble the rest of your optional toppings. Shred the imitation crab meat and mix with a little bit of mayonnaise to help hold the crab together. Stuff tortilla shells with cucumber, crab meat and toppings. Top with a squirt of mayonnaise if desired. Its kind of a build your own type of appetizer/meal.
