Poi Okinawan Doughnuts

One of the wonderful celebratory times during the year in the islands is our Obon Festival at our Buddhist Churches. A familiar site is large woks of hot oil with these doughnuts being fried up for the lines of waiting customers.

Ingredients: Print   Add to cart
US Metric
  • 1 (16 oz.) pkg poi
  • 2 large eggs, lightly beaten
  • 1/2 c. brown sugar, firmly packed
  • 1/2 c. sugar
  • 2 1/2 c. all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • Garnish:
  • sugar, optional

Cooking Process:

Heat oil for frying. In mixing bowl, combine poi, eggs and sugar. Stir in flour, baking powder and salt; adding water to moisten. Deep fry heaping tablespoonful until golden brown.

how to serve:

Optional to roll in sugar. Makes 25-30 doughnuts.
