US Metric
  • 3-3 ½ lb. spareribs, whole slab
  • 2 TB Shaoxing wine
  • 1 ½ tsp. salt
  • Pinch white pepper
  • 1 ½ c. water, as needed

Marinade:

  • 2 cloves garlic, crushed
  • ½-inch ginger, peeled, crushed
  • ½ c. hoisin sauce
  • 2 TB catsup
  • 2 TB mirin
  • 2 TB brown sugar
  • 1 TB Aloha shoyu

Cooking Process:

In a small bowl; combine wine, salt and pepper. Rub onto ribs. In a mixing bowl; combine marinade ingredients. Place ribs in a shallow roasting pan; generously rub marinade onto ribs. Refrigerate 2-3 hours. Preheat oven to 375 degrees. Line rack of broiler pan with aluminum foil. Place water into bottom of broiler pan. Place ribs on prepared pan. Bake 30 minutes; basting as needed. Turn slab; continue baking 1 hour; basting as needed. Serves 4-5.
