Thanksgiving Leftover Turkey Mashed Potato Hash
Use up your leftover turkey and mashed potatoes for this delicious breakfast treat.
- 1 cup leftover turkey finely chopped
- 2 cups leftover mashed potatoes
- flour (optional)
- 2 tablespoons finely minced onion
- 4 tablespoons oil for frying
- 2 tablespoons butter for frying
Chop turkey, mince onion and mix into mashed potatoes. You probably don't need any seasoning since everything should be seasoned already. Use salt and pepper only if necessary. Form into patties and roll in flour (optional) for an extra crispy crust. Heat oil and butter in pan on med to med-high heat. Regulate temperature to prevent burning. Place patties in pan and cook for 10 minutes on each side. Do not turn or mess with patties to allow a nice crust to form on each side.
Serve with eggs for a fantastic breakfast!
