An island twist on a breakfast favorite.
2 tsp. vegetable oil
1 large onion, chopped
3 large potatoes, peeled, cubed
2 TB-1/4 c. water as needed
1 (12 oz.) can low-sodium Spam, coarsely chopped
4 cloves garlic, chopped
pinch garlic salt, freshly ground black pepper
1 tsp. fresh ginger, grated
¼ c. green onion, chopped
In a skillet over medium heat, sauté onion and potatoes in oil until potatoes are slightly browned. Add Spam, garlic, salt and pepper and ginger; cook 2-4 minutes.Add water as needed if skillet becomes too dry. Remove from heat; stir in green onion.
Makes a great sandwich too, top with a fried egg. Serves 4.
