Layered Mango Dessert
Perfect for those who want to know what to do with all of their leftover mango! Or for the ones who have a lot of mangoes every year!
- 2 cups flour or graham cracker crumbs
- 2 cups sugar
- 1 1/2 cups butter
- 8 oz. cream cheese, softened
- 8 oz container Cool Whip, thawed
- 1 tsp. vanilla
- 2 Tbsp. unflavored gelatin
- 1 cup water
- 1 cup boiling water
- 1/4 cup lemon juice
- 5 cups diced mangoes
Preheat oven to 350 degrees.
Combine flour or graham cracker crumbs and 1/2 cup of sugar in mixing bowl. Cut in butter. Press evenly into 9" x 13" pan.
Bake for 25 minutes or until golden brown. Cool crust.
Beat cream cheese with 1/2 cup of the remaining sugar. Fold in Cool Whip and vanilla. Spread over cooled crust. Chill until firm.
Soften gelatin in water. Add boiling water and the remaining cup of sugar. Stir until gelatin dissolves. Stir in lemon juice and mangoes. Spoon carefully over cream cheese layer. Chill until firm. Top with whipped cream. Cut and serve!
