Island Style Mahi Mahi

There is simply a deliciousness about oven dishes made with mayonnaise.  Topped onto fish or seafood is wonderful. I had a similar special of the day lunch at a local restaurant, that served their version on top of a bed of garlic pasta. Rich and flavored with local seasoning, this is a popular no fuss dish.

  • 1 c. mayonnaise
  • 2 TB sesame seed oil
  • 1 TB Aloha shoyu
  • 1 lb. mahi mahi filets
  • salt, freshly ground black pepper
  •  vegetable oil as needed
  • 2 oz. crab meat
  • 1/4 cup parmesan cheese
  • 2 TB melted butter

Optional items: chopped green onions, onions, mushrooms


Cooking Process:

Preheat oven to 375 degrees.  Line a baking dish with aluminum foil.  In a mixing bowl; combine mayonnaise, sesame seed oil,  parmesan cheese, melted butter and soy sauce. Set aside.

Season fish with salt and pepper. Arrange fish in a single layer in prepared pan. Scatter crab meat and any optional items onto fish. Top with mayonnaise mixture. Wrap tightly with aluminum foil. Bake 20-25 minutes Uncover, place under broiler for 4-6 minutes until bubbly.
