  • 1 (8 oz) package somen
  • 1/4 pound smoked deli ham, diced
  • 1 small can pineapple bits
  • 1 small can mandarin oranges, diced
  • 1/4 shredded parmesan
  • 1 tablespoon onion, finely minces
  • 5 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Cooking Process:

Lightly salt a pot of water and bring to the water to a boil. Add the somen and cook until the noodles and tender but firm.  Rinse under cold water and allow all water to drain from somen.  Pat dry if necessary.

 

Open pineapple and mandarin oranges.  Strain juice into a separate container and set aside.  Dice mandarin oranges.  Mix fruit, ham, mayonnaise, salt and pepper in a bowl.  When somen is thoroughly cooled, cut into bite-sized pieces and add to bowl along with the parmesan cheese.  Mix thoroughly to evenly coat somen.  Add more mayonnaise and some of the reserved juice from the fruit as necessary.  Chill for at least 2 hours before serving.  Garnish with chives, fresh mint or basil (optional).
