Bibinka II

While just as delicious as the original Bibinka I recipe, this takes it to another level beginning with rice and broiling the sugar mixture on it's top.  It is very worth the extra effort. No worries, never any leftovers.

  • 5 1/2 c. mochi rice
  • 5 1/2 c. water
  • 1 can (12 oz.) coconut milk
  • 1 lb. dark brown sugar
  • banana leaves, wilted

Cooking Process:

Rinse rice, drain and cook with water in a rice cooker. In a saucepan over medium heat, mix coconut milk and 1 1/2 cups of brown sugar; stirring until sugar dissolves. Preheat oven to 350 degrees. Place wilted banana leaves into a 13x9-inch baking pan. Into cooked rice, stir remaining brown sugar and half of coconut milk mixture. Pour into prepared baking pan. Top with remaining coconut milk mixture. Bake for 20 minutes, then place under broiler for 5 minutes; until top is browned.
