Dad's Beef Luau Stew
Beef luau stew recipe - traditional Hawaiian dish made with beef, taro leaves, coconut milk. Its very simple yet very satisfying! This is dad's recipe which was given to me last month. Thanks Dad!
- Beef Luau Stew Recipe
- 3 lbs. chuck roast, cut into cubes
- 3 cans chicken broth
- 3 cans coconut milk
- 2 packages frozen taro leaves (Dad used about 2lbs fresh)
To make this simple beef luau stew recipe, add beef and broth to pot and bring to boil. Turn heat down and cook for 2 - 3 hours until meat is tender but not falling apart. Add taro leaves and coconut milk. Cook additional 15 minutes and serve. If cooking with fresh taro leaves, be sure to cook in a separate pot of boiling water with 1 teaspoon of baking soda added. Once boiling for 5 minutes, pour out the water, add fresh water and cook for 30 minutes. Add cook taro leaves to stew along with coconut milk once meat is tender.
