Mom's Mayonnaise Chicken
Mayonnaise chicken - some people call it cornflake chicken. I've been making this for my kids since they were in elementary school. I originally used cracker crumbs for the crust but now use cornflakes. A great way to enjoy moist, delicious "fried" chicken without frying.
- 6-8 chicken thighs
- 2 cups cornflakes, finely crushed
- 1 cup mayonnaise
- salt, pepper, garlic powder to taste
Put cornflakes in a plastic bag and smash until medium to small crumbs are formed. Season chicken with salt, pepper and garlic powder. Roll in mayonnaise, then roll in cornflake crumbs.
Place in baking pan and cook on 375 for 30-40 minutes or until golden brown and juices run clear.
