Baked Chocolate Mochi
A chocolate lover's twist on your mochi making adventures!
- 2 cups mochiko (sweet rice flour)
- 2 cups sugar
- 1 Tbsp. baking soda
- 1 cup semi-sweet chocolate chips
- 2 1/2 oz. can evaporated milk
- 1/2 cup butter
- 1 tsp. vanilla
- 2 eggs, beaten
Preheat oven to 350 degrees.
Sift dry ingredients. Melt butter and chocolate chips together in saucepot on stovetop.
Combine butter and chocolate chip mixture with milk, vanilla and eggs; mix well. Add dry ingredients until batter is smooth
Pour into greased 9" x 13" pan. Bake for 45 minutes. Cool completely, then cut with plastic knife.
