Mahi Mahi w/Coconut Curry
Mahi mahi cooked in a bright yellow, creamy coconut curry sauce.
- 4 mahi mahi fillets*
- 2 tablespoons butter
- 1 tablespoon oil
- 1 small onion
- 2 tablespoons fresh green pepper
- 2 tablespoons fresh red pepper
- 1 tablespoon fresh ginger, peeled and grated
- 2 garlic cloves
- 1 can coconut milk
- 1 1/2 tablespoon red curry paste
- 1 teaspoon tumeric
- Juice of one lime
- 1/8 teaspoon cayenne pepper
*If you can't find mahi mahi, use cod or halibut.
Dice the onion, peppers, and mince the garlic and ginger. Sauté in butter and oil for about 5 minutes on medium heat. Add the curry paste and tumeric to the pot and blend in. Add the coconut milk, salt, and cayenne and let it simmer for about 5 minutes and stir well. Next gently add in the fish fillets and squeeze lime over fish. Blend the sauce well, making sure not to disturb the fish. Allow everything to cook for about 10 minutes on medium heat. Serve with rice. Garnish with fresh bird chili and minced green onion if you prefer.
