Purple Dragon Fruit Salad w/Macadamia Nut Dressing

This Chef LaTorre signature salad shines with bright colors, local flavors and a range of textures.

Depending on your location you can easily substitute the Manoa lettuce with locally grown greens from your area. At Hawaii Sustainable Chef, we LOVE Naked Cow Dairy Farms, as they are currently the only cheese producer on the island of Oahu. 

If you don't live in Hawaii or have access to Naked Cow Dairy Farms Cheeses, I recommend substituting with a feta or a local soft cheese from your area.

Salad

  • 1 bunch of Manoa lettuce
  • 1/2 cup Island Princess Hawaii macadamia nuts toasted
  • 1 purple dragon fruit (cube half, other half for dressing)
  • handful of sea asparagus 
  • 2-3 scallions diced 
  • Naked Cow Dairy Farm 'Little Rind Big Cream' or feta*

*use non-dairy vegan cheese for vegan

Dressing

  • 2 cups of organic EVOO
  • 1 cup Big Island macadamia nuts toasted
  • 1/2 purple dragon fruit (saved from salad)
  • 1/2 fresh organic lemon, squeezed for the juice
  • 1/4 a red onion rough chopped
  • Hawaiian red salt
  • fresh ground pepper

Cooking Process:

To assemble your salad, chop up your lettuce, dice up the scallions, cube up your purple dragon fruit & cheese.

Toast or bake all the macadamia nuts for 10 minutes on 350 degrees. Set some aside for the salad, using the rest to create your dressing. Using a food processor, blend the first five ingredients to make your own dressing from scratch. Add salt & pepper to your liking. 

It's really great to know what's in your food and by making your own dressing from scratch, you can avoid all those preservatives and fillers that extend the shelf life of store bought dressings, but take a tole on your health. 

My rule of thumb is, if I can't pronounce the ingredient list, I don't buy it. Save the extra dressing, as it will last in the fridge for a while! Depending on your location you can easily substitute ingredients such as the Manoa lettuce with locally grown greens from your area. You can find their exceptional products at the Wednesday night market at the Blaisdel or the Saturday morning market at KCC. Get there early, because they tend to sell out.
