Carrot Cake Cacao Pancakes
Carrot Cake Cacao Pancakes - A vegan, flour-less, gluten-free pancake!
- 1 cup organic carrots
- 1 cup walnuts
- 1/2 cup raisins
- 1/2 raw cacao nibs
- 1/4 cup of organic honey
- Butter or cooking spray
In a good food processor blend your first four ingredients until smooth. Add in half of your honey (2-3 tablespoons), which will help bond the ingredients.
Coat your pan with butter, coconut oil or your favorite cooking spray. Shape into balls and cook in pan on medium heat. Flatten with a spatula, cook each side for 1-2 minutes and flip.
Serve and drizzle with remaining honey.
