Blueberry Cheesecake w/Shortbread Crust
One of my all-time childhood favorites!
- 2 blocks butter
- 4 Tbsp. powdered sugar
- 2 cups flour
- 1/2 cup Island Princess Hawaii macadamia nuts, chopped
- 8 oz. cream cheese
- 3/4 cup powdered sugar, sifted
- 1 tsp. vanilla
- 1 container Cool Whip (non dairy topping)
- 1 can blueberry pie filling, chilled
Combine ingredients together. Press into 9" x 13" pan. Chill for 30 minutes. Preheat oven to 350 degrees. Bake crust for about 10-15 minutes, until golden brown.
Mix sugar and cream cheese. Fold in Cool Whip and vanilla. Pour on cooled crust. Chill until ready to serve. Serve topped with Chilled Blueberry pie filling.
