NOH Butter Mochi

  • 1 box 16 oz mochiko flour
  • 2 2/3 cups sugar
  • 3 tsp baking powder
  • 2 cups milk
  • 1 block butter melted
  • 5 eggs
  • 1 tsp vanilla extract
  • 1 pkg NOH coconut milk mix
  • 1 cup warm water
  • 1 cup shredded coconut

Cooking Process:

Preheat oven to 350 degrees

Combine mochiko flour, sugar and baking powder in a large mixing bowl.  Set aside.  In a medium sized mixing bowl, add NOH coconut milk and warm water.  Mix until well blended.  Add eggs, milk and vanill.  Mix thoroughly.  Add to large mixing bowl and blend on medium speed for 3-4 minutes or until smooth.  Add butter and blend for 1 minute.  Pour into greased 9x13" baking pan.  Bake for 1 hour or until golden brown.
