I really love the combination of fresh fruit and chocolate and mango is no exception. Mango brownies are the perfect balance of fruit and chocolate!
- 3 oz butter
- 9 oz plain chocolate, chopped into small pieces
- 2 teaspoons vanilla extract
- 7 oz soft light brown sugar
- 2 eggs
- 2 1/2 oz plain flour
- 4 oz dried mango, chopped into small pieces
- 2 1/2 fl oz sour cream
- 1/4 chopped macadamia nuts
Heat the oven to 350 °F rease and line an 8 in circle or square pan with a piece of baking parchment cut to fit. Melt the butter in a saucepan, add the chocolate and continue to melt over a low heat, stirring all the time. Allow to cool. Add the vanilla, eggs and sugar in a large bowl and beat until light and fluffy. Stir in the sifted flour, followed by the chocolate mixture, mango, macadamia nuts and sour cream. Spread the mixture into the prepared pan and bake in the center of the oven for 40-50 minutes. I like to cook for 40 minutes, then turn off and allow brownies to cook for another 10 minutes.
