Creamy Mango Ice Cream w/Strawberry Swirl

I love to make ice cream, especially when made with fresh fruit!  This recipe is extra creamy and smooth and I love the sharp contrast of the sweet mango with the tart strawberries!

Ingredients: Print   Add to cart

  • 2 cups heavy whipping cream
  • 2 cups mango puree
  • 1 tablespoon lime juice
  • 1/4 cup sugar

Strawberry Puree

  • 1 container fresh strawberries
  • 1/4 cup sugar

Cooking Process:

Puree the mango and strain the pureed pulp to remove any fibers.  Combine the pulp, lime juice and the sugar till the sugar is dissolved. Chill in the refrigerator.

Whip the cream and then fold it into the mango pulp.

Pour the mango cream mixture into the machine and follow the instructions of your machinge.  While the mango ice cream is setting, put the strawberries in a food processor or blender and puree it with sugar.  Set aside.  Once ice cream is complete, pull it out from machine and swirl strawberry mixture into ice cream and put into freezer until it is set/ready to serve.
