  • 3 lemons, juice squeezed
  • 1/2 cup caster sugar
  • 1/2 medium seedless watermelon, fruit cut into chunks

Cooking Process:

Squeeze lemons into a large pitcher; add leftover rinds to pitcher. Add sugar and stir until dissolved.  In a blender, puree watermelon in batches until smooth; pour through a fine-mesh sieve into pitcher (you should have about 8 cups of juice). Stir to combine. (Refrigerate, covered, up to 3 days.) Serve over ice.  Add more lemons if you like it really tart!
