Portuguese Stewed Chicken Recipe

A simple, one-pot meal where you literally brown the chicken, pour all of the ingredients into the pot, cover and set the timer.  It doesn't get easier than that!

  • 2 tablespoons oil
  • 1 whole chicken, cut up
  • 1 portuguese sausage, sliced
  • 1 teaspoon smoked paprika
  • 1 large onion, pulverized in food processor
  • 1 green bell pepper, pulverized in food processor
  • 1 large can whole tomatoes, smashed
  • 1 large can whole olives
  • handful of fresh tomatoes (optional)
  • 2 cloves garlic, crushed
  • 1/2 cup red wine
  • 1 cup chicken stock
  • 1 bayleaf
  • 1 sprig rosemary
  • handful parsley
  • pinch sugar
  • salt and pepper to taste

Cooking Process:

Heat oil in deep cooking pot.  Fry cut-up chicken pieces ( a few at a time) in hot oil for 5 minutes each side, remove chicken and repeat until all pieces are browned.  Put all chicken back into pot. Add remaining items into pot and cook for 60-90 minutes or until chicken is tender and falling off the bone.
