

Portuguese Sausage Potato Curry Puffs
This is a local take on a Thai curry puff, made with ground Portuguese sausage, potatoes, onions and curry wrapped in a crispy pastry.





- 2 tablespoons butter
- 1 medium red onion,finely chopped
- 2 tablespoons curry powder
- 1 teaspoon chili powder
- 1 cup Portuguese sausage, cooked & ground
- 2 large potatoes, cooked & cut into squares
- 1 teaspoon sugar
- salt & pepper to taste
- Oil for deep frying.
Pastry:
- 1 lb all purpose flour
- 5 oz butter flavored shortening
- 3/4 cup iced water
- 1/2 teaspoon of salt
Remove skin from Portuguese sausage. Cook sausage for a few minutes until oil is released and meat is ground up. Blot excess oil from pan but leaving about 1-2 tablespoonsin pan. Add butter, onion and cook until tender and slightly carmelized. Add curry powder, chili powder and slowly fold in the potatoes, sugar, pepper, salt and cook for 5 minutes. Mix well and set aside to cool.
Pastry
Mix flour with shortening, water, salt, and knead well. Allow pastry to rest for 30 minutes. Roll dough out and cut out 3" circles. Fill pastry with filling, fold in half and crimp edges. Heat oil and fry until golden brown on both sides.
