Coconut Mango Lassi
A cool refreshing mango lassi made extra creamy with coconut!
- 2 1/2 cups coconut water
- 1 ripe mango, peeled and chopped
- 1/2 cup plain lowfat yogurt
- 1/4 cup cream of coconut
- 1 tablespoon fresh lime juice
- 2 tablespoons honey
In a blender, add 1 1/2 cups of the coconut water, mango, yogurt, cream of coconut, honey and lime juice and puree until smooth. Transfer to large pitcher and stir in the remaining 1 cup of coconut water. Refrigerate until ready to serve. Pour into glasses and garnish with mango slices or grated coconut if desired.
If you want it extra cold, you can blend it with ice cube or try using fresh frozen mango.
