Salmon Shrimp Cakes
These salmon shrimp cakes are similar to the more common crab cake.. make them smaller for bite-sized pupu's or bigger as a main course.
- 1 lb. fresh salmon, minced*
- 1 lb. shrimp, mince*
- 1 small onion, minced*
- 2 TB sake
- 2 TB cornstarch
- 1 tsp. salt
- ½ tsp. white pepper
- ¼ c. green onions, chopped, optional
- vegetable oil as needed, for frying
*If desired, process salmon, shrimp and onion in a food processor. Both should resemble ground meat. In a mixing bowl; combine salmon, shrimp, onion, sake, cornstarch, salt, pepper and optional green onion. In a skillet over medium heat; drop by heaping tablespoonfuls; flatten as desired. Brown on both sides in oil. Serves 6-8.
