Vegan Sweet Potato Macadamia Nut Burgers

  • 1 large sweet potato, cooked 
  • 1 15oz can of chickpeas 
  • 1 15oz can of cannellini beans or equivalent
  • 1 cup white onion, finely diced
  • 1 cup macadamia nuts, chopped
  • 3 cloves of fresh garlic, minced
  • 1 cup rolled oats
  • 1 carrot grated
  • 2-4 TBSP olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1 egg*
  • freshly ground black pepper
  • Butter Lettuce or bun

Cooking Process:

Bake sweet potato, peel skin and empty potato into bowl.  Drain and rinse beans, add to the sweet potato.  Saute onion in 2-4 tablespoons of oil, add garlic and continue to saute until translucent and tender.  Mash beans and potato, add remaining ingredients and spices and form into patties.  Allow to rest in refrigerator for 30 minutes.  You can boke or grill these. Serve on a bun or as a lettuce wrap  *To make vegan, use an egg substitute.
